I've quickly become a huge fan of making tsukemono- it's so easy! And tasty. And inexpensive. This is the recipe I've been using, but I think it's a bit basic... I was given the impression that real tsukemono is usually pickled for longer. In any case, it comes out delicious so whatevs.
